Comfort Food for Those Cold Winter Days

Coming inside from a cold, wet, wintry day and smelling a pot of simmering stew, flaky pastry on chicken pie, or a hearty macaroni and cheese casserole will bring a smile to almost everyone.

One-dish meals are especially handy if you are short of time and still want a well-balanced meal for the family. Most of the ingredients are cooked together, so serving and cleanup are at a minimum.

When making these recipes, think ahead and make extra for the next day, or freeze leftovers that can be used at a later date.

The following recipes are easy to make and absolutely delicious. If you're not a fan of dumplings in your beef stew, make a batch of baking powder biscuits or have thick slices of multigrain bread as an alternative.

If you're wanting something other than pastry on the chicken pot pie, put a layer of creamy mashed potatoes on top and brown in the oven.

Preheat oven to 215 degrees F. Line a baking sheet with parchment paper.

In a large bowl, use an electric mixer on medium speed to beat together egg whites, 1 teaspoon strawberry extract, and cream of tartar until frothy. With mixer running, add powdered sugar in tablespoon increments. Add food coloring and continuing beating until stiff peaks form, taking care not to overbeat.

Transfer mixture to a pastry bag or large zip-top plastic bag fitted with large round tip. Pipe into 2-inch spirals on prepared baking sheet. Bake in preheated oven for 45 minutes to 1 hour, rotating once. Turn off oven and open door. With meringues still inside oven, let dry out for 10 to 12 minutes. Remove parchment paper from baking sheet and let meringues cool completely.

Bayview revitalization comes with huge price to black residents

Change is coming to Herman Autry's street in San Francisco's Bayview district.

Just down Oakdale Avenue from the block where Autry has spent much of his 66 years, trains now glide into an elevated stop for the new Third Street light-rail line. The power company is putting underground the tangle of lines that block the neighborhood's panoramic views. And bulldozers have knocked down the old burger shack that served as a hangout for local gang members, making way for new condominiums.

But Autry, a veteran Muni driver, worries the improvements are not going to benefit people like him - the African Americans who for decades have been the majority population in a neighborhood known as the city's most blighted.

"They're fixing things up, but it isn't for us," said Autry, who has seen black families move out one by one.

Last week, NBC unveiled an all-new, controversial KITT, which is set to star in the made-for-TV Knight Rider movie in February. Based on the still-to-be-released Ford Mustang Shelby GT500KR (click here for engine-revving video), this virtual Stang comes tricked out with a supercomputer that can hack almost any system; a very capable weapons system; and a body—thanks to nanotechnology—that's able to shape-shift and change color at will. Like its predecessor, the 21st century KITT gets AI from digital effects wizards that makes it an ideal crime-fighting partner: logical, precise and infinitely smart. Designer Harald Belker, who has created the Batmobile for Batman and Robin and a next-gen space shuttle for Armageddon, came onboard to give the new KITT. a unique look. "The goal was to make it look more aggressive without being hokey or garish," Belker says.

A reader wrote to one newspaper with a Letter to the Editor saying he was boycotting a restaurant because they flew their ethnic flag out front.
